These homemade baked fish sticks are a healthier alternative to the store-bought version and are sure to be a hit with kids. They can be paired with oven-baked sweet potato fries or a simple salad for a well-rounded and fuss-free dinner.
Baked Panko-Crusted Fish Sticks:
Ingredients:
- 1 pound white fish fillets (cod or tilapia), cut into strips
- 1 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 eggs, beaten
- Cooking spray
Instructions:

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly coat it with cooking spray.

In a shallow dish, combine panko breadcrumbs, Parmesan cheese, dried oregano, garlic powder, paprika, salt, and pepper.

Dip each fish strip into the beaten eggs, ensuring it's fully coated.

Roll the fish in the panko mixture, pressing gently to adhere the breadcrumbs.

Place the coated fish strips on the prepared baking sheet.

Lightly spray the top of the fish sticks with cooking spray to help them crisp up in the oven.

Bake in the preheated oven for 12-15 minutes or until the fish is cooked through and the coating is golden brown.

Serve the baked panko-crusted fish sticks with a side of ketchup or tartar sauce.
